Add coconut and almonds to a food processor. Process until broken down and crumbly. Add the dates and process until well combined and a crumbly and doughy consistency is reached. Optional: soak the dates in hot water for about 30 minutes before processing. This is especially helpful if the dates you are using are more dried out.

Line a loaf pan (approx. 8.5 x 4.5 inches) with parchment paper or lightly grease with oil. Press the date-almond-coconut "crust" into the pan, smoothing it out with a spatula. Place in the freezer briefly while you prepare the Toasted Coconut Almond Butter layer.

Next, mix the Toasted Coconut Almond Butter with the vanilla protein powder, ensuring that they are well-combined. The consistency should become dough-like. Press the mixture into the loaf pan on top of the date-almond-coconut "crust". Use a spatula to smooth out.

Optional: Press 8 almonds into the top of where each bar will be. This makes the bars more visually appealing and adds a nice crunch! Place the pan in the freezer for approximately 15 minutes to firm up.

Finally, slice the bars into 8 squares and enjoy! Store in the fridge and eat up within a week if they can last that long!
