Blend the base: In a blender, combine: Milk, sweetener, vanilla, white chocolate peppermint butter, protein powder, peppermint extract, salt, and xanthan gum. Blend until completely smooth and well incorporated.

Freeze: Pour the mixture into a Ninja Creami pint container. Secure the lid and freeze on a level surface for at least 12 hours, or until fully solid.

Spin: Remove the pint from the freezer, take off the lid, and place it into the Ninja Creami.
Select Lite Ice Cream (or Ice Cream if using full sugar).

Re-spin if needed: If the texture looks crumbly or powdery after the first spin, add 1–2 tablespoons milk and select Re-spin. Repeat once more if needed until creamy.

Add mix-ins: Create a small well in the center and add melted chocolate, chopped chocolate, or candy cane bits.
Select Mix-In.

Serve: Scoop and enjoy right away, or smooth the top and refreeze for later scooping.

1/16 tsp peppermint extract
1/4 tsp salt
1/4 tsp xanthan gum (optional)
