Add pecans to a food processor. Process until broken down and crumbly. Add the dates, vanilla extract, and cinnamon to the food processor. Process until well combined and a thicker dough-like consistency is reached. Optional: soak the dates in hot water for about 30 minutes before processing. This is especially helpful if the dates you are using are more dried out.

Line a loaf pan (approx. 8.5 x 4.5 inches) with parchment paper or lightly grease with oil. Press the date-pecan "crust" into the pan, smoothing it out with a spatula. Place in the freezer briefly while you prepare the Pecan Pie Butter layer.

Next, mix the Pecan Pie Butter with the vanilla protein powder, ensuring that they are well-combined. The consistency should become dough-like. Press the mixture into the loaf pan on top of the pecan-date crust. Use a spatula to smooth out.

Optional: Lightly sprinkle cinnamon and place 8 pecans across the top of the bars. This makes the bars more visually appealing and adds a nice crunch! Place the pan in the freezer for approximately 15 minutes to firm up.

Finally, slice the bars into 8 squares and enjoy! Store in the fridge and eat up within a week if they can last that long!
