Preheat the oven to 300F. Toast the coconut for about 3-5 minutes until golden, being careful not to burn. Remove from oven and let cool.

*Alternatively, toast on the stovetop in a skillet over medium-low heat with ~1 Tbsp coconut oil.

Take about 1 Tbsp of filling at a time and roll into balls, placing on a parchment-lined baking sheet. You can make them bigger or smaller as desired! Place in the freezer while you prepare the chocolate.

4

Carefully melt the chocolate in short stints in the microwave or on the stove top in a double boiler.

Dip the truffles in chocolate, making sure they are fully coated. Remove, allowing any excess chocolate to drip off before placing back on the baking sheet. Complete the process with all truffles and sprinkle with flaky sea salt, extra coconut or chopped pistachios as desired. Let firm in the freezer for about 15 minutes and then enjoy the sweet salty chocolately goodness!
