Super Simple Cookie Dough Bites

Cookie Dough Bites are a delicious, easy treat made with Nutterly Delicious Cookie Batter Cashew Butter (or swap in regular cashew butter or peanut butter). With just a handful of simple ingredients and minimal added sugar, they come together quickly for a sweet, satisfying bite. Enjoy them on their own, or add them as a fun topping or mix-in for oatmeal, smoothies, ice cream, and more.

Mix all the ingredients except flour and chocolate chips together in a medium bowl, until combined and well incorporated.

Fold in the flour, starting with less and adding more to reach the desired consistency (so that you are able to form balls that hold together). Fold in the chocolate chips.

Roll into bites of desired size, about 1-2 tsp for the mini version, spreading out on a small cookie sheet. Continue until you have used up all the dough. Place in the freezer for at least 15 minutes to firm up.

Store in the fridge or freezer. Enjoy as a topping on oatmeal, ice cream, yogurt, smoothies or by themselves as a quick treat!

Instructions

1/2 cup Nutterly Delicious Cookie Batter Cashew Butter or plain cashew butter

1/2-2/3 cup almond or oat flour

1-2 Tbsp pure maple syrup (optional for added sweetness)

1 tsp pure vanilla extract

pinch of salt

1/4-1/2 cup of chocolate chips or cocao nibs (mini chips work best!)
