Date sugar is a great nutrient-rich sweetener option for these cookies, though it can sometimes be harder to find or more expensive. Feel free to substitute with another granulated sweetener such as coconut sugar, brown sugar, or regular sugar. You can also use a combination of granulated sweetener and maple syrup — just adjust the milk amount as needed to achieve a smooth, soft dough consistency.

Preheat the oven to 350°F. In a mixing bowl, combine all ingredients except the cookie toppings and stir until fully incorporated. Add milk as needed until the dough reaches a smooth, soft consistency that holds together without becoming sticky. Optional: chill the dough in the refrigerator for 30 minutes for a thicker cookie texture.

Divide the dough into 8–10 portions and roll each into a ball. Place on a lined baking sheet and gently flatten to about 1/2-inch thickness. Bake for 10 minutes.

While the cookies are baking, prepare your toppings. I typically use a dark chocolate bar broken into pieces, but chocolate chips, M&Ms, or your favorite cookie mix-ins work great too.

Remove the cookies from the oven and immediately press your chocolate topping onto each cookie while still warm. Optional: finish with a sprinkle of flaky sea salt. Let cool for at least 20 minutes before enjoying your delicious homemade cookies!

1 tsp pure vanilla extract
1/2 tsp baking soda
splash of milk
Optional: 1/8-1/4 tsp pure almond extract
