Falafel Gyros
The recipe of the month is a delicious Mediterranean-inspired meal with Middle Eastern and Greek elements. Packed with nutritious ingredients and fresh flavors, this simple recipe provides great sources of fiber, plant-based protein and a variety of vitamins, minerals and phytochemicals. What is falafel? Most simply put – fried chickpea balls that are popular fast food in the Middle East. They are commonly made from a batter of mashed chickpeas and spices/herbs.

 

Cooking Methods
This month's topic is cooking methods, including definitions of various types of common food preparations and their relationship to nutrition. Any way we alter a food, whether it is chopping, blending, boiling, or frying (to name a few!) changes its chemical composition and in turn, impacts the existence and availability of nutrients it originally contained. There are many factors to consider such as the type of food, the nutrients in question, the desired flavor and texture, and more. Ultimately, I will provide some overall takeaways that you can consider when it comes to cooking for flavor, texture and optimal nutrition!
